Saute gently for 2 minutes or so; do not let the garlic brown. Then, pour 1/4 cup Chardonnay (or another dry white wine) into the pan. Making your own pizza is a great way to spend more time in the kitchen and experiment with flavors you may not find on your local delivery place’s menu. For instance, this rosemary and garlic crust is bursting with unique flavor – and you can use the extra dough to make breadsticks.
To make one pizza crust and 6 breadsticks, you’ll need:
- 4 cups flour
- 1 ½ cups warm water
- 2 ½ teaspoons (or 1 packet) active, dry yeast
- 1 ½ teaspoons table salt
- 1/4 cup olive oil, plus 2 teaspoons
- 2 cloves of garlic, minced
- ½ teaspoon garlic powder
- 2 tablespoons fresh rosemary, minced

- Pour the yeast, sugar, and ¼ cup water into a large mixing bowl. Let it sit until it gets frothy (about 5 minutes).

- Slowly add the remaining 2 cups of flour to the bowl, stirring well the entire time. The mixture should eventually form a firm, yet slightly sticky ball.
- Add the fresh rosemary to the dough, and then knead it for 10 minutes by hand on a lightly floured surface. If you have a mixer with a dough hook, you can knead it with this device for 5 minutes.
- Place the dough in a lightly greased bowl, and cover the top with plastic wrap. Let it rise in a warm place for 1 ½ hours. The dough should be puffy and look about twice the size it was when you finished kneading it.
- Using lightly greased hands, press down on the dough to remove the air.
- Divide the dough ball in half. Shape one half into a ball (this will be for your pizza crust).
- Divide the other half of the dough into 6 pieces. Roll each piece into a log. These are your breadsticks.
- Place the breadsticks on a baking sheet.
- Combine the remaining olive oil with the minced garlic, and brush it over the breadsticks. Reserve a small portion of this oil to brush on your pizza crust.
- Let the breadsticks rest for 20 minutes, and then bake them at 375 F for 15 to 20 minutes.
- After the ball of pizza dough has had 20 minutes to rest, shape it into a crust. Brush it with the remaining garlic mixture, and then top it as desired.
- Bake your topped pizza for about 20 minutes at 400 degrees F.

2nd wave of Immigration
After the completion of the Canadian Pacific Railway in 1885, the Chinese were discouraged from immigrating to Canada, through a tax of $50, that was due from each immigrant upon arriving in Canada. This tax, enacted in 1885, was later raised to $100 in 1900, and was $500 by 1923, which effectively halted the influx of immigrants from China. The Canadian government also passed the Chinese Immigration Act, which explicitly prohibited nearly everyone of Chinese descent from entering Canada. The Chinese that remained in Canada were excluded from holding any professional positions by law. This is how so many Chinese ended up in the restaurant industry.
Finally, the exorbitant immigration tax and Chinese Immigration Act, were lifted in 1947. More Chinese filtered into Canada, particularly during the 1960’s-1980’s. This wave of immigrants chose to settle in urban areas, particularly Vancouver and Toronto. Both cities had already established “Chinatowns” with built in communities. Often, the Chinese that came over would end up working in a relative’s restaurant to pay off his/her travel debts.

If you want to save yourself some time, instead of making your own pizza dough, pick some up at your local grocery store. You can generally find whole wheat and regular pizza dough at your local grocery store.
Before you start to work the dough though, you should preheat your oven to 500 degrees.
Dust your cutting board or counter top with some flour, and use a rolling pin to spread out the dough. If you don’t have a rolling pin, you can use a cylinder-shaped glass instead.
You can roll out the dough into a traditional round pizza shape, or you can go more free-form. As long as the pizza will fit on your baking stone or cookie sheet, it doesn’t really matter what shape you make your pizza.
Once the dough is rolled out, sprinkle some cornmeal on your baking stone or cookie sheet, then transfer the dough on over.
Finally, you’ll want to brush the dough with a little bit of olive oil.
The Cheese Mixture
This ricotta asparagus pizza does not have a sauce. Instead, you will make a cheese mixture. In a medium sized bowl, combine 1 1/3 cup fresh ricotta, ¼ cup shredded Parmesan cheese, 3 cloves minced garlic and about 2 tablespoons chopped fresh parsley. Once it is mixed together, use a spatula to spread the cheese mixture over the pizza dough. You will want to leave at least a ½ border for your crust.

Then, take the asparagus and spread it evenly over the pizza.
