How To Make Ricotta Asparagus Pizza

If you are craving some pizza, but want to keep it healthy, try out this great ricotta asparagus pizza. This is a great pizza to make in the spring, when you can easily find fresh asparagus at an affordable price.

The Dough

If you want to save yourself some time, instead of making your own pizza dough, pick some up at your local grocery store. You can generally find whole wheat and regular pizza dough at your local grocery store.

Before you start to work the dough though, you should preheat your oven to 500 degrees.

Dust your cutting board or counter top with some flour, and use a rolling pin to spread out the dough. If you don't have a rolling pin, you can use a cylinder-shaped glass instead.

You can roll out the dough into a traditional round pizza shape, or you can go more free-form. As long as the pizza will fit on your baking stone or cookie sheet, it doesn't really matter what shape you make your pizza.

Once the dough is rolled out, sprinkle some cornmeal on your baking stone or cookie sheet, then transfer the dough on over.

Finally, you'll want to brush the dough with a little bit of olive oil.

The Cheese Mixture

This ricotta asparagus pizza does not have a sauce. Instead, you will make a cheese mixture. In a medium sized bowl, combine 1 1/3 cup fresh ricotta, ¼ cup shredded Parmesan cheese, 3 cloves minced garlic and about 2 tablespoons chopped fresh parsley. Mix it all together, and if you want, add in a little salt and pepper.

Once it is mixed together, use a spatula to spread the cheese mixture over the pizza dough. You will want to leave at least a ½ border for your crust.

The Asparagus

For the toppings, you are going to need about a pound of asparagus. After you wash the asparagus, you are going to need to get out your vegetable peeler.

Holding the asparagus by the tough ends, use your vegetable peeler to shave off ribbons of asparagus into a bowl Make sure you do not shave off the tough ends; they can taste really bitter.

Once you have shaved the asparagus, add a little olive oil to the bowl in order to coat the asparagus.

Then, take the asparagus and spread it evenly over the pizza.

The Baking

Now you are ready to throw your ricotta asparagus into the oven. You should have already preheated your oven to 500 degrees. Make sure the baking rack is in the middle; this will ensure that your pizza cooks evenly.
